The Saskatoon Hilltops went through the 1991 schedule with seven wins and one loss. They scored 350 points in the eight games and allowed only 138 to be scored against them. Brent Schneider was named most valuable player and eight Hilltops made the all-star team. In the first round of the playoffs, the Hilltops beat Edmonton Huskies, 52-6.

In the league final, they faced the old rivals, Regina Rams, but came away with a 32-9 victory. In the western final, the Hilltops took a 22-0 lead in the first quarter and defeated the Okanogan Sun 41-27. In the Canadian final at Griffiths Stadium, the Hilltops beat the Ottawa Sooners, 48-7, with Brent Schneider completing 21 passes for four touchdowns and 472 yards.

It was the eighth time the Hilltops won the national championship. Dave Hardy was coach of the team and it was his first national title.
